For two nights only, Park Hyatt Toronto debuts its Global Chef Series with a limited-seating event featuring award-winning chef Felipe Schaedler, founder of São Paulo’s celebrated restaurant Banzeiro and a Chef of the Year honouree.

About Chef Felipe Schaedler

Felipe Schaedler moved with his family to the interior of Amazonas at 15 and soon found his calling in the kitchen, inspired by his family’s first business in the state, a pizzeria in Itacoatiara. After settling in Manaus, he abandoned plans to study law and enrolled in culinary school, choosing to dedicate himself to local cuisine and the knowledge of the forest. He has since become one of the leading voices of his generation in Amazonian gastronomy.

In 2009, Schaedler opened Banzeiro, a restaurant that helped bring the cuisine of Amazonas to national prominence and earned major accolades from Veja Manaus Comer & Beber and Prazeres da Mesa. Moquém do Banzeiro followed in 2016, and Veja Manaus Comer & Beber named him “Chef of the Year” for three consecutive years (2011–2013). In 2014, Forbes recognized him as one of Brazil’s 30 most influential people under 30.

He opened Banzeiro São Paulo in 2019, expanding his work to a national audience. That same year, he was named an Honorary Citizen of Amazonas, and in 2020 received the same title from Itacoatiara. Banzeiro São Paulo was included in the Michelin Guide’s Bib Gourmand list in 2020. In early 2024, Schaedler participated in the REACH to FOREST event in Washington, where he spoke about Amazonian cuisine and rainforest preservation.

Working closely with local producers, Schaedler researches and highlights native ingredients such as Yanomami-cultivated mushrooms, saúva ants, rustic tubers, edible flowers, and regional fruits. The family-run Banzeiro Group currently operates three restaurants: Banzeiro São Paulo and, in Manaus, Banzeiro and Moquém do Banzeiro.

About Jean-François Rouquette

Chef Jean-François Rouquette is deeply rooted in the traditions of classic French cuisine with a culinary journey that reflects a lifelong respect for terroir, seasonality, and craftsmanship. Since 2005, he has led PUR’ at Park Hyatt Paris-Vendôme, where his cuisine balances precision with modern creativity. Drawing inspiration from his travels and the natural rhythm of the seasons, Chef Rouquette creates refined, contemporary French dishes that honour heritage while pushing expression forward.

Chef Alberto Landgraf is a two MICHELIN-starred Brazilian chef celebrated for redefining contemporary Brazilian cuisine. Drawing on his Japanese-Brazilian heritage, his cooking emphasizes precision, simplicity, and harmony, transforming locally sourced ingredients into refined, visually striking dishes. Consistently recognized on Latin America’s 50 Best Restaurants list, Chef Landgraf’s cuisine reflects a thoughtful balance of technique and natural expression. He will also be releasing a new book this year and will join guests for a meet-and-greet experience, including book signings during the dinner events.

The Global Chef Series is an exclusive culinary program welcoming internationally acclaimed chefs for highly limited collaborations at Joni Restaurant. Each residency pairs a celebrated guest chef with Park Hyatt Executive Chef Jonathan Williams to craft immersive, multi-course tasting menus bringing the distinct flavours and signature dishes of the chef’s home city to Toronto for a brief, moment in time. Each residency will be complemented by a curated selection of fine wines and spirits, selected to enhance and elevate each menu.
